Aside from Tteokbokki, Japchae is my favourite Korean dish. Similar to gimbap, it can be made in many different ways, you can add any vegetables and meat you like. I personally love using carrots, oyster mushrooms, zucchini, and spinach. It may look complicated because there are several ingredients to prepare, but if you'v tried making Gimbap recipe already, Japchae will feel like a piece of cake.
Ingredients
- Glass noodles
- Carrots
- Oyster mushrooms
- Zucchini
- Spinach
- Any type of meat (I used Sirloin here)
- Oyster sauce
- Soy sauce
- Sugar
- Oil for stir-frying
- Sesame seeds (optional)
Recipe
Step 1: Prep the Ingredients- Soak glass noodles in warm water until they soften.
- Slice the carrots, zucchini, and meat into thin strips.
- Tear oyster mushroom into thin pieces, about the same size as carrot or zucchini strips.
Step 2: Stir-fry
- Heat up a pan and add some oil. Stir-fry the meat until it's no longer red.
- Add glass noodles and soy sauce, then stir-fry until noodles turn slightly brown.
- Add the vegetables and continue stir-frying.
- If the flavour seems bland, add a little oyster sauce and a pinch of sugar. (No need for measuring spoons. just pinch and taste!)
- Sprinkle some sesame seeds on top before serving.
